How to Store Chives: these are tender and don't last long! Keep spritzed with water and cold in a bag in the fridge. Use asap.
Chives are in the same family as onions, scallions and garlic, they grow from small bulbs. In the middle ages, chives were promoted as a cure for melancholy and believed to drive away evil spirits. Don't heat chives or they will lose their flavor and vitamin C, as well as their digestive properties.
Chive Pesto Recipe:
2 cups roughly chopped chives
1/4 cup olive oil
1/3 cup toasted nuts: almonds, pine nuts, walnuts, etc.
1-3 ounces or 1/3 cup more or less parmesan cheese
1 clove or less of garlic
WHIRL IT ALL IN A FOOD PROCESSOR until fairly chopped up but still smallish chunks
Serve on noodles, fritatta, Spanish tortilla, crackers....
COTTAGE CHEESE WITH CHIVES
8 oz. 1 tbsp. 1 1 bunch 1/2 tsp. |
cottage cheese mustard shallot, finely chopped chives, washed and chopped paprika salt white pepper |
Blend cottage cheese and mustard. Mix shallot & chives into cottage cheese. Season with paprika and pepper and garnish with more chives, if desired.
CHIVE VINAIGRETTE
5 tbsp. 1 tbsp. 1 tsp. 3 tbsp. 2 tbsp. |
olive oil white wine vinegar Dijon mustard Salt and Pepper chopped chives chopped tarragon (optional) |
Mix up and dress a salad.
